This temple of Italian cuisine is located in Madrid, in the heart of the Salamanca district on Calle Ortega y Gasset. Ciro Cristiano, former executive chef of the Big Mamma group (Bel Mondo and Villa Capri), is the mastermind behind this culinary venture. Baldoria is an authentic Italian restaurant, focused on produce, quality and service, with ingredients sourced from Italy. Its pizzas are characterised by their fluffy dough and high-quality ingredients.

The interior of the restaurant, designed by Estudio Pombo, stands out for its colourfulness, evident in every corner, and for its Mediterranean flair, evident in both the tableware and the décor. Naples is the inspiration for the décor, specifically Procida, a small, little-known fishing island in Campania that is full of charm, where every house is painted a different colour. The restaurant’s pastel-coloured walls are adorned with works by the Neapolitan photographer Ciro Pipoli, whilst the chairs, lamps, neon lights and tableware—including plates hand-painted in Positano—complete the look.

It is an Italian restaurant where you can sample the finest Neapolitan pizza whilst enjoying live music from its balcony. It has been recognised as the best pizzeria in Spain and has improved its standing at European level in the prestigious ‘50 Top Pizza Europe 2025’ list, rising to second place in the ranking. It has also reached 8th place in the ‘50 Top Pizza World 2025’ ranking. Furthermore, it has won the Best Cocktail List 2025 – Sei Bellissimi Award, which recognises its cocktail list, featuring highlights such as the Amalfi Tomic, the Smokey Room and the Truffle Negroni.

The menu features Neapolitan pizzas, homemade pasta and dishes to share, which vary according to the season and the availability of ingredients at the markets. The offering is rounded off with a wide selection of Italian wines from small producers and signature cocktails, both alcoholic and non-alcoholic.

The secret lies in impeccable technique: the dough is incredibly light thanks to a 48-hour pre-ferment and a fleeting 80-second pass through their traditional Acunto oven at 420°C. Best of all, despite the awards and the high standards, they keep their feet on the ground: they have just been awarded a Solete by the Repsol Guide, the accolade given to places where you can eat like a king at reasonable prices.
