MANERO, the luxury dining brand created in 2018 by Carlos Bosch, is opening in Marbella, in the heart of the refurbished Don Carlos Marbella hotel. This highly anticipated opening will take place in three stages: The Terrace + Campari Bar opened its doors in March in the wonderful central courtyard of this iconic hotel, which is being brought back to life — located in Elviria, one of the most exclusive areas of the Costa del Sol — and has already become the gastronomic epicentre of the project, with a full programme of weekly events and an extensive menu led by MANERO-style Mediterranean paella. Now, the spaces and concepts Bar MANERO (in line with those already present in Alicante and Madrid) and Bistró MANERO (the more ‘restaurant-style’ and international menu that has already been launched at Manero Marqués de Cubas in the capital) are joining the line-up, completing a first phase of 1,000 square metres on the beachfront. The second phase, MANERO Club, is scheduled for summer 2027.
For MANERO, Marbella is a natural step in the roadmap of a brand that aspires to become Spain’s leading luxury dining brand with genuine international reach. This is not simply the opening of a restaurant: it marks the arrival, in one of the Mediterranean’s most cosmopolitan destinations and in one of its finest hotels, of a brand concept that views luxury as a shared experience, a ritual and a sensory memory.

MANERO TERRACE + CAMPARI BAR
The Terrace + Campari Bar is the gastronomic heart of the MANERO project in Marbella. Conceived as a reinterpreted Andalusian courtyard—a modern neo-cortijo with extraordinary vegetation, handcrafted details and a constant dialogue between indoors and outdoors—the Terrace offers the most extensive and diverse menu within the MANERO Marbella ecosystem. It is the space where the brand showcases its full repertoire: caviar, Iberian meats, house preserves, fine sandwiches (squid, beef pepito, bikinis…), MANERO classics and, at the centre of the table, the MANERO Mediterranean Paella as a novel signature dish.
The Campari Bar, set within the courtyard, presides over the ritual of the Mediterranean aperitif: signature Spritz, vermouth, house cocktails and the perfect nibble to accompany them. It is the space for a long midday, for a lingering after-dinner chat, for the elegant transition into the evening.
A WEEK AT MANERO · FULL PROGRAMME OF EVENTS
La Terrace presents a weekly programme of seven events, each offering a unique experience: the embodiment of the Gastro Lifestyle, the brand ethos that shapes the MANERO experience.
Monday · La Vie en Rosé. Selected rosé wines, light cuisine and the atmosphere of a lingering aperitif to kick off the week with a Mediterranean twist.
Tuesday · Fish and seafood. A day dedicated to the bounty of the sea: oysters, shrimp, king crab and the finest catches from the Mediterranean, prepared with the understated elegance that characterises MANERO’s cuisine.
Wednesday · Grilled meats. Fire takes centre stage. Select cuts, precise cooking and the table as the stage.
Thursday · Champagne Day. A unique offering: for €45 per person, guests enjoy unlimited champagne from 12:00 to 16:00. Aperitif time elevated to a ritual.
Friday · MANERO Mediterranean Paella. A menu featuring three starters and the house’s signature Alicante-style paella as the main course. Kicking off the weekend with our signature dish.
Saturday · El Vermuteque. Vermouth hour turned into a ceremony: an aperitif and party enlivened by music and atmosphere, a festive prelude to the meal.
Sunday · MANERO Grand Buffet. Brunch in its most Mediterranean form: guests help themselves freely from a wide and carefully curated selection until 4.00 pm.

MANERO MEDITERRANEAN PAELLA · THE SIGNATURE DISH
If there is one dish that encapsulates the essence of the restaurant, it is the MANERO Mediterranean Paella. It is neither a tourist paella nor a decorative concession: it is an authentic Levantine rice dish, faithful to the Alicante tradition, cooked to a single consistency with caramelised grains, and served with the socarrat scraped off at the table in front of the guest. It is served as a family-sized portion, to be shared, and comes in three versions: señoret, red prawn and arroz a banda.
The choice is no accident. Carlos Bosch was born in Alicante, and that is where the group has its roots. The MANERO paella is a statement of provenance: authentic Spanish cuisine as the foundation of gastronomic luxury, without disguise or compromise. In a destination like Marbella, where the international can dilute the local, MANERO chooses to affirm its origins and elevate them.

BAR MANERO AND BISTRÓ MANERO
MANERO Marbella completes its first phase with the simultaneous opening of two venues, each with its own distinct identity and a clear role within the brand’s ecosystem.
Bar MANERO. The brand’s classic tapas bar, in its Marbella incarnation, with the Caviar Bar as the venue’s standout feature. A direct continuation of the MANERO Bar at the Marqués de Cubas flagship in Madrid: a bar, premium cocktails, tapas to share and the social energy that defines the MANERO identity, with its own distinct character — the southern light, a nod to the cosmopolitan Andalusian bar and, in the evening, a musical atmosphere featuring a resident DJ. This is the space where the true MANERO experience is born and the meeting point for the Costa del Sol’s casual luxury.
MANERO Bistro. The project’s fine dining venue, set outdoors on a balcony jutting out towards the Mediterranean: one of the best restaurant locations on the entire Costa del Sol. The Bistró is also a natural extension of the one at the flagship in Madrid, with its signature menu featuring French and Italian influences—langoustine tail ravioli with cava sauce, MANERO Milanese, onion soup, hake Wellington, chocolate soufflé—now presented with a Mediterranean twist and al fresco. Tables with tablecloths, unhurried service and a dining experience for the most discerning diners.
MANERO CLUB, 2027 · A WELL-ESTABLISHED CONCEPT COMES TO MARBELLA
The second phase of the project, scheduled for summer 2027, will bring MANERO Club to Marbella: a venue dedicated to signature cocktails, private events and nightlife. This is not a new concept, but rather a format already well-established within the brand’s ecosystem, with operational presence at MANERO Marqués de Cubas (Madrid) and MANERO Molla (Alicante). Its arrival in Marbella will add a further 600 square metres and complete a project designed to accompany the guest from midday aperitifs right through to the last drink.
