Added to this is the gastronomic offering of Executive Chef Mario Sandoval, holder of two Michelin stars, based on reviving the flavours of traditional cuisine with the most avant-garde techniques and the careful selection of the finest ingredients.
Each of the dishes on the menu showcases the chef’s creativity, from oysters with jalapeños to traditional slow-cooked suckling pig, a classic on Mario’s menu, and shellfish ravioli with champagne sauce. A wide variety of meat and fish dishes complete the gastronomic offering, such as Angus ribs glazed with orange purée and Jaipur curry, or melt-in-the-mouth beef cheeks with tomato stew and passion fruit seeds.
