La Única restaurant opened its doors in Madrid just three years ago in the Salamanca neighbourhood at Calle Claudio Coello 10, with Michelin-starred chef Andrés Madrigal at the helm of its ‘Mexiterranean’ haute cuisine offering, a fusion of Mediterranean and Mexican cuisine. La Única Madrid belongs to the La Única Group, founded by Felipe Williamson, Pedro Roca de Togores, Mariano Menéndez and Marcos McCluskey. The group has a presence in Colombia, Spain and Mexico. It is currently under the culinary direction of Óscar Gallegos.

A few months ago, it reinforced its Mexican cuisine offering at a new location on Calle Alcalá 87 with a new concept inspired by traditional cantinas in northern Mexico, but with a modern atmosphere and décor. The restaurant seeks to establish itself as a benchmark for contemporary Mexican cuisine with northern influences on Madrid’s current gastronomic scene.

The new space covers 200 square metres and maintains the restaurant’s original philosophy and concept of hospitality. The terrace allows guests to enjoy both the dishes and the cocktails with views of the Retiro Park.

Chef Óscar Gallegos, born in Monterrey and trained in different Mexican cuisines, bases his cooking on selected ingredients and traditional techniques adapted to the Madrid environment. Among the main dishes are rib eye chicharrón, chamorro con asado and slow-cooked pork shank with dried chilli marinade. New recipes are incorporated, such as tuna ceviche with watermelon and black molcajete.

The bar is run by mixologist Lían Alviz, who is responsible for a cocktail menu that uses Mexican products and modern techniques. One of the best-known cocktails is the Corn Treu, made with corn, citrus fruits and tequila, which won first place in the 2024 Margarita Challenge. The menu includes options with mezcal, truffle notes and herbal flavours such as coriander.
