Takumi
In Japanese, “takumi” means artisan, or master, and refers to someone who works with their hands. “TA” is the combination of the initials of the two master chefs, Toshio and Álvaro, who form a team, “kumi” in Japanese. A declaration of intent by two chefs who aim to portray the elegance of Japanese cuisine in the presentation of each of the proposals in their menu. In their quest for excellence, the Ta-Kumi team ensure that the fish is not only of the highest quality, but that it has also been treated and slaughtered in the optimum way. This has a direct influence on the colour and toughness of the flesh, avoiding fibrous pieces and guaranteeing the most tender and highest quality fish, which means a much more pleasant texture and taste in the mouth. Naturally, Ta-Kumi’s menu offers an appealing range of nigiris made with the best products of the Malaga coast, such as horse mackerel, mullet or bream. Among the most popular are the shrimp with caviar, or the red prawn, and a must in any order, the seared nigiri, of mullet, fatty tuna and salmon. Given the delicate treatment the product receives, the sashimi is another must-try here, as it perfectly reflects the elegance of the exquisite presentation. As a result of their extensive careers and experience, Toshio Tsutsui and Álvaro Arbeloa delight the diner with an atmosphere of distinction and originality which can enjoyed both in the elegant dining-room and in the traditional bar, where you can watch the sushiman at work.
