Per Se Bistró is the new restaurant led by Andrés Madrigal in Madrid, located at Augusto Figueroa 32 in the Chueca neighborhood, the former site of the legendary Arce restaurant.

The renowned chef has returned to Spain after a stint in Panama and a period as a consultant, now back at the forefront of the culinary scene, running his own restaurant in a historic establishment with which he maintains a strong emotional connection. He presents an honest and meticulously crafted cuisine, recently awarded a Repsol Sun. In a short time, it has become a major gastronomic landmark in the capital.






In this new venture, Andrés Madrigal reaffirms his commitment to gastronomic excellence based on respect for the product and the pursuit of authentic flavors. Per Se Bistró is undoubtedly a space where seasonal cuisine takes center stage.

The tasting menu, available for the entire table, maintains the spirit of gastronomic exploration at Per Se Bistró. This journey through Madrigal’s cuisine includes dishes such as the corn tortilla filled with chorizo ​​and Cabrales cheese hash, the chicken croquette in pepitoria sauce with parsley emulsion, and patatas bravas (2.25). The menu continues with sea bass ceviche with corn, tree tomato, passion fruit, and coconut, followed by Jerusalem artichoke with romesco sauce, black garlic, and portobello mushroom. Among the main courses, the fried skate with pil pil sauce and kimchi and the Angus rib with celeriac and hoisin sauce stand out. As a final touch, the chocolate with tonka bean, praline and black pepper adds a sweet and aromatic touch to the menu.







Per Se Bistró’s new menu features dishes that celebrate the richness of natural flavors. Their “Sin Latitud” (Without Latitude) menu includes dishes such as cauliflower with red curry and pico de gallo, artichoke with peppers and baba ganoush, Jerusalem artichoke with romesco sauce, black garlic, and portobello mushroom, and peas with foie gras, fried egg, and Iberian pork jowl. Among the seafood selections, highlights include sea bass ceviche with corn, tree tomato, passion fruit, and coconut; fried skate with pil pil sauce and kimchi; and skrei with papapomodoro and bouillabaisse. For meat lovers, the menu offers venison loin with juniper, currants, and beets; duck lardons with orange sauce; and Angus ribeye with celeriac and hoisin sauce. In the dessert section, the grapefruit pie with thyme, vanilla and orange and the chocolate with tonka bean and praline close the experience with a sweet and balanced ending.
